Day 1 : Crunchy-Cucumber-Carrot Yogurt Salad
What you need :
- 1 large cucumbers and carrot grated
- 1/4 cup chopped fresh coriander
- few leaves of mint, hand pounded(optional)
- 1/4 cup dil (soya) leaves (optional)
- 1 cup plain fat free yogurt (curd)
- 1/4 cup roasted crushed peanuts
- 1 small green chilly, chopped (optional)
- 1tsp roasted sesame seed
- 1tsp roasted Jeera(cumin) seeds powder
- Rock Salt and black pepper to taste
Preparation:
In a large bowl, combine the grated cucumbers, carrot, chopped fresh coriander, Dill leaves, mint leaves and green chilies
In a separate bowl, whisk plain yogurt, add salt, jeera powder, crushed peanuts, salt and pepper (as per your taste) Pour the creamy dressing over the cucumber carrot mixture and gently toss everything together to ensure even coating.
Allow the flavors to meld in the salad for about 15-20 minutes, sprinkle roasted sesame seeds before serving to give that little crunch to your salad.
Note: If you are allergic to any of the mentioned ingredients, you can easily skip it. If you want dairy free option, can make dressing with either lemon or apple cider vinegar instead of curd.
